To make this dessert we will first make the oil sponge cake and then the ganache:
CARAMELIZED OLIVE OIL SPONGE CAKE from CENTENARY OLIVE TREES
Ingredients of the sponge cake
- 250 grs wheat flour
- 250 grs of sugar
- 5 eggs
- 200 ml Extra virgin olive oil ÁGURA
- 50 grs of butter ointment
Making the oil sponge cake
Beat the eggs, the sugar and the butter in a mixer until tripling their volume.
Then we add the olive oil from centenary olive trees in the form of a fine drizzle and continue beating for a couple of minutes approximately.
Then we add the flour with the help of a wooden spatula.
Finally, add all the dough inside the mold and bake at 180 degrees for half an hour, let cool and set aside.
WHITE CHOCOLATE GANACHE
Ingredients
- 200 grams of 33 % fat cream
- 300 grs of white chocolate
- 100 ml of extra virgin olive oil ÁGURA
Making White Chocolate Ganache with Oil
We boil the cream and add the white chocolate, we mix it well with the help of a spatula, then we add the extra virgin olive oil from Centenary Trees without stopping stirring.
Let it cool in the fridge for about 12 hours.
DESSERT ASSEMBLY
We cut the sponge cake in a square or rectangular portion, with the help of an electric blade we caramelize its exterior walls.
We then assemble the plate using a base of olive oil, the sponge cake and a white chocolate ganache quenelle.
